Blueberry Coffee Cake

~1 1/2 hours single recipe cover
You will need:
  • 100ml sunflower oil
  • 250g Greek yogurt
  • 410g brown sugar
  • 420g white four
  • 2 eggs
  • 1 teaspoon vanilla extract
  • lemon zest
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 250g blueberries fresh/frozen
  • 115g butter

Start by mixing 260g sugar with the yogurt and oil until combined. Add eggs, vanilla, lemon zest, baking powder, baking soda and salt, and whisk until smooth. Then continue by adding 260g flour and mix just until combined. Stir in the blueberries with a spatula.

Place the mix in a 24cm round tray covered with baking paper.

Separately prepare the streusel(crumble) by mixing together 160g flour with 150g of brown sugar and 115g melted butter. Sprinkle over the mix from the tray, breaking into small pieces with your fingers.

Place the tray in the preheated oven (175C degrees) for around 60min until a toothpick inserted in the center comes out clean. Let it cool to room temperature.
