Start by whisking the eggs with a pinch of salt. Add the flour together with the baking powder and continue to whisk. Add the sugar together with the oil, the yogurt, and the lemon zest.
Cut the apples in small dices and cover them with a bit of flour.
Add the apples into the batter and mix them with a spatula.
Prepare a muffin tray covered with paper cups. Fill them 3/4 with the mix and place the tray in the preheated oven (180C degrees). Keep them for approximately 20 min until they turn brown and are passing the toothpick test. It is an easy and light dessert than can also be a nice breakfast together with a milk coffee or some fresh fruits.
