In a medium pan add the butter together with the olive oil and let them melt. Add the flour and whisk rapidly in order to incorporate the flour into the fat. Start pouring the warm milk and whisk continuously. In total the mix will cook for around 10 minutes. Add the spinach and bring to a boil. Keep it on the flame for maximum 3 minutes.
In a small bowl smash the garlic and mix with 2-3 tablespoon of cold water.
Pour the garlic over the spinach. Season with salt, pepper and nutmeg. Serve it as is or with a poached egg on top and some toasted bread.
