Mix the water with milk and butter in a pot over low flame until the butter is completely melted. Don't let it boil. Let it cool down until it's just a little warm.
Meantime mix 300g flour with the yeast and the sugar. Incorporate the mix from step 1 and then add the egg. Add the rest of the flour mixed with salt and knead the dough.
Divide the dough in 8 equal pieces and shape them into buns. Place them on a tray covered with baking paper. Cover them with a kitchen towel and let them rise for 45 min. After this period lightly squash them (about 1cm). Brush them with the egg yolk mixed with 2 tablespoon of milk. Don't forget to sprinkle your favorite seeds on top.
Place them in a preheated oven (200C degrees) for about 15min.
